Did you know that not only are blueberries delicious but they are incredibly healthy too?
They are low in calories, high in fiber, vitamins and minerals, as well as a rich anti-oxidant, which is known for fighting toxics and free radicals in the body. And did I mention delicious!
While great on their own they also make wonderful toppings to ice cream, yogurt, and even salads and a great addition to smoothies as well as many other dishes.
Our berries are naturally produced. Wilson Blueberry Farm does not use fungicides nor pesticides. We do add some fertilizers as needed.
Our goal is to come as close to organic as possible given our growing conditions.

Whole Wheat Blueberry Pancakes
Ingredients
Directions
1. Sift together flour and baking powder, set aside. Beat together the egg, milk, salt and artificial sweetener in a bowl. Stir in flour until just moistened, add blueberries, and stir to incorporate.
2. Preheat a heavy-bottomed skillet over medium heat, and spray with cooking spray. Pour approximately 1/4 cup of the batter into the pan for each pancake. Cook until bubbly, about 1 1/2 minutes. My husband prefers to sprinkle the blueberries and some chocolate chips on top now. Turn, and continue cooking until golden brown.

Oatmeal Chocolate Chip Blueberry Cookies
1 sticks of butter, room temperature
½ cup coconut oil shortening
3/4 cup dark brown sugar
1/4 cup of sugar
2 teaspoons vanilla
2 eggs
1 1/2 cups of whole wheat flour
1 teaspoon cinnamon
3 cups of whole oats, not the quick kind
1 cup of chocolate chips, I prefer dark chocolate
1 cup of frozen blueberries
1 cup chopped walnuts
1. With a mixer, cream the sugars, vanilla, coconut oil & butter together.
2. Add the eggs one at a time.
3. By hand, add the flour and cinnamon and mix until both are incorporated.
4. Add the oats one cup at a time. It will get difficult to stir and you may think you’ve added too much oats, but you haven’t.
5. Add the chocolate chips, walnuts and frozen blueberries.
6. Drop by rounded teaspoons onto your baking sheets.
7. Bake for 10 minutes on 350 degrees.
8. Place on a cooling rack and try not to sample too much!

Wild Blueberry Baked Brie
Ingredients1 frozen pie crust
1 small wheel of brie
1 cup frozen Wild Blueberries
1 tsp flax seed
1 tsp honey
¼ cup dry roasted, salted pistachios
1 egg, beaten (for brushing on top of crust)
PreparationPreheat oven to 375. Heat Wild Blueberries in a small saucepan until boiling. Turn heat down to medium high and let simmer 1-2 minutes. Remove from heat and drain off Wild Blueberry juice. Place Wild Blueberries back into sauce pan and stir in 1 tsp chia seeds and honey. Unroll pie pastry onto parchment paper. Place brie in center. Cover with wild blueberries and top with pistachios. Fold over the top of the brie until covered. Place brie pastry with parchment onto cookie sheet. Beat egg in small bowl and brush top of pastry with egg wash. Bake 20-25 minutes or until crust is golden brown.
